Story:
Started to drink tea when I started my weight loss journey. Sitting in the office waiting for the lunch break. Tea really keeps me going in the morning. Started exploring a few different teas, but it was too time consuming to get the tea leaves in the bag and brew tea. Settled with the best jasmine tea tea bag that could be found in Chinese grocery until recently. Saw a video about how tea bags are very low quality tea and there are easier ways to brew tea. Discovered the “gai wan”, Chinese brewing device. Very easy to use and allow to brew small quantity of tea and not constantly have the tea leaves brewing. Amazing. Tried a higher quality Jasmine green tea and there is no turning back now.

Why drink tea?

  • A lot of health benefits from drinking tea.

  • Helps to reduce hunger and not break fasting

  • Very nice drink cold or hot; good alternative to water.

Best brewing methods:

  • Gai wan (2oz or 60ml) + Zojirushi thermos bottle.

    • Green tea:

      • Boil water to 70’C -> Add to thermos bottle

      • Add tea leaves in Gai wan and hot water.

      • Wait 2mins 45 secs.

      • Pour from Gai wan into a cup

    • Oolong and Pu’er tea:

      • Same things but 100’C hot water.

  • Cold brew jar:

    • Fill the bottom with some tea leaves.

    • Add water at room temperature.

    • Let it sit in the fridge for 24h.

Best tea list:

  • Jasmine green tea: floral, bitter

  • Cherry rose green tea: Rose, floral

  • Melon sencha tea: melon, sweet

  • Pu-er tea: earth,

  • Formosa High mountain (Jade) Oolong tea: creamy buttery smooth, transition taste between green and oolong tea

  • Bao zhong oolong tea: creamy buttery smooth, green to less green as you steep

  • Bai Hao (Oriental beauty) Oolong tea: Floral, hint of peach, chrysanthemum sweet, honey sweet
